How to cook/bake with food allergies and gluten sensitivities?

My son is gluten sensitive and is allergic to potato s (not yams/sweet potato s). I am allergic to rice and peas. I am finding it extremely hard to find a flour or baking mix that I can use that is safe for the both of us. Everything I find pre-made has potato starch or rice flour or pea protein or all of them in one. Are there any gluten free alternatives that I can put together that doesn t have potato, pea and rice in it?
